Moringa Drumsticks Pods Curry

This curry is one of the staples in our household. It tastes great with rice but sometimes my kids and I even have it like soup. For the longest time Moringa has been more than a familiar food in Indian and South Asian subcontinent but its benefits and popularity has newly taken hold in the west. I'd best prefer moringa any day in curry form rather than those hard to swallow capsules. Making this curry is simple enough. I prepared this as a one pot dish. I added the tomatoes, onions, spice masalas, moringa pods and coconut powder in InstaPot and cooked for 25 mins. The sweetness of tomatoes and nuttiness from coconut were flavors that were unmatched by none. On their own pods don't have much of potent scent but when cooked with the spices, tomatoes and coconut my house filled up with pleasant sweet and savory aromas. Then talk about the health benefits and flavorsome taste scales- for me, this curry takes the crown for all.
